Shrimp chips, also known as jade chips, potato and shrimp chips, shrimp flavour potato chips, cake chips, shrimp sticks, noodles, rice cake chips, are processed with shrimp powder and starch. It is cheap and delicious. Fried puffed foods are crispy, delicious and nutritious, and are very popular among consumers, especially the colorful shrimp crackers are more popular with children. After the shrimp powder, starch and water are mixed evenly in a certain proportion, they are added into the hopper of the shrimp chip machine. The spiral auger driven by the motor pushes the powder slurry entering the machine forward, and the hot water in the steamer outside the auger is used to steam and cook the powder slurry. The mold is formed into a delicate, smooth, elastic cylindrical or elliptical shrimp stick. After cooling, it is sliced into thin slices, dried or air-dried to be the finished product, and can be fried.
Below is a detailed introduction to the shrimp chip production process:
1. Mixing
Shrimp meat, starch, seasonings, and water are combined in a mixer to form a uniform dough.
2. Forming
The dough is pressed into thin sheets using a forming machine. The sheets are typically 1-2 mm thick and can be cut into various shapes, such as circles or squares.
3. Steaming
The formed shrimp sheets are steamed to gelatinize the starch and cook the shrimp meat, ensuring the desired texture and flavor.
4. Cooling
The steamed shrimp sheets are cooled to prevent sticking and prepare them for cutting.
5. Cutting
Cutting Machine: The cooled sheets are cut into the desired sizes and shapes.
6. Drying
The cut shrimp chips are dried to reduce moisture content, typically to below 10%. This step ensures the chips can be stored and puff properly during frying.
7. Frying and puffed
The dried shrimp chips are quickly fried in hot oil. The rapid evaporation of moisture causes the chips to puff up, creating a crispy texture.
8. De-oiling
After frying, the chips are passed through a centrifugal de-oiling machine to remove excess oil and reduce oil content.
9. Seasoning
Optional seasoning, such as salt or chili powder, is applied to the chips using a seasoning machine.
